Very interesting article, I just emailed it to my brother who has gout. Looks like I'm going to have to crank up the juicer and drink some celery juice.

Excellent article! I eat celery because it is what I call, Anti-caloric. It burns more calories to chew a stalk of celery than the celery itself possesses.

You're the second person to mention the peanut butter thing Red, I'll have to try it. Unfortunately most peanut butters contain trans fats, but organic peanut butter is OK.

I like celery stuffed with peanut butter, too, but I use the Jif reduced fat p.b. Celery is also good with The Laughing Cow Light Swiss cheese spread (usually found in the deli dept.).

I prefer it with cream cheese. But I love just plain old celery as well. Use it in my potato salad, Tuna salad, macaroni salad, eggsalad, green salad....
