      my fav is a simple baked chicken breast, a little bit of canola oil and 3 or 4 whole carrots cut in chunks,with seasonings on it,cover with foil, bake for an hour until chicken is done, the carrots will be soft but not mushy, and the chicken broth will soak the carrots. I eat ALL the carrots, seems like a lot of carrots at one sitting, but I swear my night vision has improved.

        I've read that during WW2 the RAF ate so many carrots their skin had an orange tint to it! :-)

          You're kidding me! My mom always told me carrots were good for the eyes.

          Incidently, the story about turning orange when you eat too many carrots is actually quite true as well.
